Entrée - Roasted plantain with rum cured Kingfish & mango salsa + Rum pairing

Main 1 - Rum drunk barbecue chicken with corn purée & fried jalapeños served on a deep fried flat bread + Rum pairing 

Main 2 - Slow cooked oxtail served with a sweet potato mash + Rum pairing 

Dessert - Coconut cream sorbet with grilled pineapple & rice pudding + Rum pairing
